- Cocer la panza y pata un día antes, para ello se lava bien la carne con abundante agua para luego dejar reposar en agua con un chorrito de vinagre uno 15 minutos. Se le bota el agua y vuelve a lavar. Ya está lista para la olla con el agua y condimentarla con el ajo machacado, sal, pimienta, comino, pimienta gorda y clavo de olor.
- Al hervir dejamos cocer a fuego medio unas 2 horas, de esta forma la panza se suaviza. Apagamos el fuego y reservamos para el día siguiente.
- Pelamos el plátano, banano, camote, patatas, zanahoria, papas, elotes y jilotes para cortarlos en rodajas gruesas. Partimos el plátano maduro en rodajas gruesas con cáscara. Los colocamos en agua con sal para evitar la oxidación. La cabeza de repollo lo partimos en tiras gruesas.
- Se pone al fuego el consomé con la carne preparada el día antes, al hervir se le agrega el apio, perejil, chile pimiento, culantro, cebolla, tomate, azúcar y chile licuado.
- Botamos el agua de los vegetales y lo agregamos a la sopa.
- Dejamos cocer hasta que la verdura se suavice.
