- Preparar un caldo para hervir. Agregar suficiente agua como para llenar la olla a la mitad y mezclarle los dientes de ajo, sal, pasta de tomate, yerba buena seca al gusto (opcional - versión Omaira), y sal de limón (hasta que quede ácido).
- Tapar con un plato para que no se muevan mucho al hervir. Cocinar a fuego alto hasta que hierva y luego bajar temperatura a media/baja por 1 hora 10 minutos.
TIP: Puyar la concha de un calabacín con un tenedor, si entra fácil, está listo. Lo más importante es que el arroz este cocido y la concha blanda.
